Honey glazed carrots with zesty gremolata

Blossom Bees' Honey-Glazed Carrots With Carrot Top Gremolata

Ingredients:

  • 5 pounds small carrots (with tops)
  • 4 tablespoons butter (cut into small cubes)
  • 1/3 cup orange juice
  • 1 tablespoon Blossom Bees' honey
  • 1 teaspoon salt
  • 2 small garlic cloves (chopped)
  • 1 tablespoon lemon zest (grated)
  • 2 teaspoons olive oil
  • 2 tablespoons lemon juice
  • 1/8 teaspoon cayenne pepper

Instructions:

  1. Cook Carrots:
    • Put carrots, butter, orange juice, honey, and salt in a big pot.
    • Cover the pot and cook on medium heat for 10–12 minutes until carrots are a little soft.
  2. Make Gremolata:
    • Wash and chop the carrot tops.
    • Mix the chopped carrot tops with garlic, lemon zest, olive oil, and a little salt in a small bowl.
  3. Finish Cooking Carrots:
    • Take the cover off the pot and cook for another 8–10 minutes, stirring sometimes, until the sauce is thick.
    • Turn off the heat and add lemon juice and cayenne pepper. Taste and add more salt if needed.
  4. Serve:
    • Put the carrots on a plate and sprinkle the carrot top mixture on top.

Cook's Note:

  • Look for carrots about 1/2"–3/4" in diameter at the widest end. Larger carrots can be halved or quartered lengthwise, as needed.
