Blossom Bees' Honey-Glazed Carrots With Carrot Top Gremolata

Ingredients:
- 5 pounds small carrots (with tops)
- 4 tablespoons butter (cut into small cubes)
- 1/3 cup orange juice
- 1 tablespoon Blossom Bees' honey
- 1 teaspoon salt
- 2 small garlic cloves (chopped)
- 1 tablespoon lemon zest (grated)
- 2 teaspoons olive oil
- 2 tablespoons lemon juice
- 1/8 teaspoon cayenne pepper
Instructions:

Cook Carrots:
- Put carrots, butter, orange juice, honey, and salt in a big pot.
- Cover the pot and cook on medium heat for 10–12 minutes until carrots are a little soft.

Make Gremolata:
- Wash and chop the carrot tops.
- Mix the chopped carrot tops with garlic, lemon zest, olive oil, and a little salt in a small bowl.

Finish Cooking Carrots:
- Take the cover off the pot and cook for another 8–10 minutes, stirring sometimes, until the sauce is thick.
- Turn off the heat and add lemon juice and cayenne pepper. Taste and add more salt if needed.

Serve:
- Put the carrots on a plate and sprinkle the carrot top mixture on top.
Cook's Note:
- Look for carrots about 1/2"–3/4" in diameter at the widest end. Larger carrots can be halved or quartered lengthwise, as needed.
