As summer ends our bees turn to goldenrod and the aster that carries the season out, and the honey they bring back is dark amber, bold, and far richer than anything spring produces. Because we never heat or ultra-filter it, the pollen stays in the jar, and with it the raw enzymes, trace minerals, amino acids, and antioxidants that filtration strips out.

We harvest every frame by hand, without extractors, heated lines, or a production floor, and we take only what a colony can spare through the winter. It is a slower way to work, and it is the only one that gets honey from hive to jar exactly as the bees made it.

Each jar is hand-poured into gold-lid flint glass, which unlike plastic is entirely inert: it sheds no microplastics and leaches no BPA or phthalates into the honey, however long the jar sits on your shelf.

The flavor is bold enough to stand up to real cooking — glaze roasted meats and root vegetables, deepen a marinade or barbecue sauce, drizzle over warm pastry or ice cream, or serve it alongside aged cheese.
